Are you thinking 'posh' three course or good homecooked? I'd go for posh looking easy three course.....
Soup to start with...loads of recipes on the soup thread, but maybe something like spicy parsnip or leek and potato...you can make the day ahead so you can just reheat before serving. Serve with some nice bread rolls..you can get some nice seeded part-baked ones now in supermarkets which add a home cooked flavour.
Main course.....something simple like chicken wrapped in streaky bacon or parma ham. Just roast this in oven for about 40mins. Serve with potatoes....I like dauphinois but its a bit of a flap, maybe hasselback (cut potato into slices but not all way through, baste with butter whilst cooking, like a cut up jacket, Google for pic if I make no sense!!), or just wedges. Roast carrots would be good with this or any other favourite veg.
For dessert, is he a fruity person or chocolatey one? I made a lovely pannacotta the other day that was really simple but came out perfectly (recipe on Tesco site) and we had it with strawberries soaked in strawbery vodka. Or a cheesecake - there's a thread about with great recipe on.

to a nice meal, only as some of you may know im not a great cook. we only got married 7 weeks ago and things seem to be drying out iykwim. so i thought i could try and cook us a nice meal, something not too hard and without tomatoes, he hates them. thanks all.

When i reall y want to treat hubby i cook him his favourite Steak, homemade chips , onion rings, musrooms and peas. Followed by a hot sticky toffee pud!
Normally do this on his birthday, he puts the kids to bed whilst i light a few candles and set the scene set the dvd player up and the steak doesnt take long either.
Alternativaly you cook always order a curry, less fuss and less washing up lol
