I am (attempting) to bring my two children (2 & 3) up as vegetarians but they are so fussy it's proving very difficult. Does anybody know any good (and reasonably) easy recipes, especially tasty pasta ones. Or failing that, as I'm getting desperate, any good shop bought vegetarian food that's suitable for toddlers? Any advice would be reeeally appreciated. x





try googling 'baby vegetarian recipe book' and see what comes up - or look on Amazon. I have 'Baby & Child Vegetarian Recipes' by Carol Timperley which is quite helpful. Annabel Karmel does a reasonable selection of veggie recipes as well.
For pasta, my two (4 and 2) love 'green pasta' (with pesto which I make myself - handful of basil leaves, some parmasan, lots of garlic, some olive oil all zapped together). Bolognaise made with quorn or equivalent, tomato and red pepper (blended when cooked), that kind of thing. Anything sweet. They will eat veggie lasagne with quorn and a topping made of plain yoghurt, one egg and a couple of handfuls of cheese, spread on top and then cook for 20 minutes on about 180.
Cheesey potato pie - mashed potatoe with cottage cheese and cheddar, shoved in an oven proof dish and topped with cheese, melted and browned under the grill. Serve with baked beans.
Spanish omlette - boil potatoes, soften garlic and onion, mix with eggs and then fry on low heat so cooks through.
Pitta pockets - just stir fry red, yellow & green peppers, onion, garlic, sweet corn, handful of tomatoes at last minute and a handful of cheese to bind it. Put lettuce in pitta and then spoonful of mixture. Blob of plain youghurt on top if liked. Always goes down well.
Veggie sausage casserole - cook sausage and put in oven with veg - carrot, onion, mushroom, tin of tomatoes, topped up with water and some tomato puree. Cook on low for an hour, add a small spoon of veg gravy granules to thicken at end if needed. Serve with mash and something green!
