Either Tesco's full fat soft cheese or if I'm feeling posh, mascarpone.

i make this all the time as dp loves it, i also swop the chocolate orange for white choc and raspberries sometimes too. i use butter straight from the fridge and mix the biscuits in with my fingers. i then leave it chilling for an hour before making the filling

Probably need more butter....I had a disaster once and now completely drench my biscuits in butter and chill before I add the topping so it doesn't absorb the liquid too much.

made it at the weekend, tasted lovely, though my base didn't set so am i right in thinking i've either used too many biscuits or not enough butter?

I think i'll be making this over Xmas - chocolate and orange are sooo Christmassy! I made DP an angel sponge cheesecake for his birthday last week which was so light and refreshing! xxx
