cakes don't usually have milk in and vitalite and pure (margarines) are suitable for baking. i just made a normal cake. as long as lo isn't allergic to eggs it's just the same as normal. i made a gorgeous chocolate one and recently made a lemon one. here's the chocolate one:
*** content="text/html; charset=utf-8" http-equiv="content-type" /> *** content="word.document" name="progid" /> *** content="microsoft word 11" name="generator" /> *** content="microsoft word 11" name="originator" />
moist chocolate cake
170g (6oz) margarine
170g (6oz) caster sugar
110g (4oz) self raising flour
85g (3oz) cocoa powder
3 eggs, well beaten
1 tbsp hot waterbuttercream filling
110g (4oz) icing sugar
50g (2oz) margarine
50g (2oz) cocoa powder
water if requiredglace icing
170g (6oz) icing sugar
50g (2oz) drinking chocolate
2 tbsp hot water to mix (approximately)pre-heat oven to 180°c: 350°f: gas 4
grease and line two 8 inch sandwich tins.
sieve together the flour and cocoa.
cream the margarine and sugar together until light and fluffy.
beat in the eggs, a little at a time, adding a tablespoon of the flour mixture to prevent curdling.
fold in the remaining flour and chocolate mixture and stir in the hot water.
place the mixture into the tins and smooth the tops.
bake for 25 minutes or until the surface springs back when pressed light -

hi, my son is one this mth and is intolerent to cows milk.
i was wondering how every1 else got around the birthday cake problem?
and if anyone knew if its possible to follow a recipe for a normal cake and just swap ingredients like butter and milk for dairy free? will the cake come out ok if i do that?
just wondering as when ive made rice pudding with rice milk instead of cows it doesnt come out the same. same with yorkshire puddings.

aww bless her she sounds like shes really coming on! at least u know all the problems havent affected her development.
Morgans doing well thanks, hes just started taking a few steps this week so hoping hel be walking by his bday which is 21st. Last time i had him weighed which was around a mth ago he was 21lbs. hes quite tall so is perfectly in line with weight and height! think hes gonna be tall and skinny like his daddy lol. Hes fine with egg but thanks for warning em about it. scrambled egg is one of his favourite meals lol and hes always fine after hes eaten it.
He has got kidney problems though, weve just found out recently he had to have a horrible test dun a few weeks ago where they put radioactive dye thru his hand to see if his kidney was draining properly. Turns out hes got an enlarged one which is draining much slower than the normal one, we get the proper results for that on the 24th sept. so trying not to think about it too much as he seems perfectly happy and healthy in himself.
