I would book it as soon as the brochures come out for that year. That way you will get the flight times you want, accommodation you want etc etc. Also, you can put down a small deposit and then go in each month or whatever and pay bits off.
If I were you I'd look around now and get some prices based on getting married next year, you'll then be a total pro on the subject by the time you can book for 2011 and will know exactly what you want. Go into your travel agents and so some research I would xx

Depends which country as they all have different regulations. I'm getting married in Turkey & have some paperwork to complete the month before

booked and paid for my zante wedding in august/september. Getting married in May.
There's not a huge amount to organise, but the paperwork (for zante) works out quite expensive

How far in advance do u usually have to book them?

hiya youll have a fab time. ive stayed at the riu tequila in playa del carmen and thats located in the same area as the others, its wonderful. ive just got back from the dominican republic and got married there we had a fabulous time. we booked in june so really late for something like that. we had been trying for a baby for 2.5 years and said if we're not pregnant in june we'll book it - so did, then in july i fell pregnant! we still went ahead though and so glad we did.
only thing i would say for mexico is there is quite a bit of paperwork and you still have to have bloodtests but it does explain everyting in the brochures.
good luck x
